Acar Timun Simple

INGREDIENTS:
1 Cucumber - cut into 4 lengthwise & sliced 1/4" thick 
2 cloves Garlic
1 Big Onion - cubed 
1 tbsp Chili Paste
5 tbsp Chili Sauce
Sugar

METHOD:
Heat up 2 tbsp oil & fry chopped garlic until fragrant.
Add in chili paste & cook until fragrant.
Add in big onion, cucumber, chili sauce & a bit of water.
Cook for 5 minutes or more until sauce is well absorbed by the cucumber.

Fresh Chili Pomfret

INGREDIENTS:
1 medium Pomfret
3 Red Chilies*
5 Shallots*
2 clove Garlic* (* pounded) 
1 Big Onion - cubed 
1 Tomato - cubed 
Salt & Sugar

METHOD:
1. Rub Pomfret with turmeric powder & salt.
Deep fry until crispy on the outer.
Dish out.

2. Heat up some oil & fry the rest of the ingredients until fragrant.
Pour on top of the fried fish.
Serve with white rice.

Kacangma Chicken

  
Kacangma Chicken is a popular dish in Miri's restaurants. Kacangma or the chinese's pronunciation Ka-Ciam-Ma is actually a type of herbs and commonly cooked with chicken served during confinement due to its benefit in improving blood circulation. My whole house is filled with the aroma of Kacangma when I cooked it today..... lovely!

Serve: 5-6 persons
INGREDIENTS:
1/2 Chicken - cut to pieces & marinate with ginger juice* 
1 cup Dried Kacangma
3" Ginger - pound & reserve juice to marinate chicken 
5 tbsp Sesame Oil + Cooking Oil
2 tbsp Oyster Sauce
4 tbsp Soy Sauce
1 cup Water
Salt & Sugar

METHOD:
1. Dry-fry Kacangma in a wok until crispy & pound it.

2. Heat the oil & fry pounded ginger for 1 min.
Add in sauces, water & let it boil.
Add in chicken, Kacangma, salt & sugar.
Cover until chicken is cooked.
The longer you cook, the better the flavour.

3. Serve with white rice.

Kerabu Tomato Ikan Bilis (Tomato Salad with Anchovies)

 
I was too busy to do maketing last weekend that I ran out of vegetables in my fridge. Coincidently I saw this salad in Ayu's house while browsing for her layered cake and I happened to have some tomatoes. So here I go.... very delicious and appetite opener and thanks to Ayu & especially to Hana, the original owner of the recipe.

INGREDIENTS:
2 Tomatoes - deseeded (HomeKreation: I left it) 
1 handful Ikan Bilis - deep fried & crushed 
1/2 Big Onion*
3-4 Cili Padi* (I ran out of stock & replaced with 1 Green Chili & 1 Red Chili) 
1 Lemongrass* (* sliced thinly) 
1 small Kasturi Lime for juice
Salt & Sugar

METHOD:
Mix all & serve.

Shabsuka

This dish can go well with roti, bread or rice....

INGREDIENTS:
500g minced beef
3 tbsp chili paste
3 tbsp minced garlics
2 tbsp ginger - minced
4 tbsp curry powder - HomeKreation: I used only 1 tbsp
1 big onion, diced
1 tomato, diced
1 cup, mix vegetables
1 can medium-size tomato puree
4 tbsp tomato sauce
1 / 2 -1 tbsp sugar
1-2 cups of water
Salt

TOPPING:
2 big onions, diced
2 Tomatoes, diced
some coriander leaves or chinese celery
1-2 red chilies, sliced
1-2 green chilies, sliced
2 tbsp fried shallots (optional)
4 Eggs

METHOD:
1. Mix minced beef garlics, ginger, and curry powder. Let it rest for at least 20 minutes.

2. Heat oil in wok and saute onions till soft.
Add in chili paste and cook till oil surfaced.
Add in marinated beef and stir well.
Add in 1-2 cups of water.
When beef has reached 3 / 4 cooked, add in tomato puree, tomato sauce, mixed vegetables and diced Tomatoes.
Stir well and add in salt & sugar to taste.
Let it simmer for a while & dish out.
The mixture shouldn't be too thick or too thin.

3. Put the beef in a baking dish and level it.
Sprinkle all the topping ingredients.
Make holes & break in eggs.
Bake at 180C degrees for 15 minutes or at least till the eggs are almost cooked.
Serve hot with white toasted soft bread or toasted french loaves.

Chocolate Cornflakes Macaroon


 
Lovely cookies that I made before Hari Raya but only now I have the opportunity to do the posting.

Makes >100 (forgot to count)
INGREDIENTS:
115ml Egg White
210g Icing Sugar
225g Choc Chips (or any amount)
140g Cornflakes - lightly crushed 
1/2 tsp Vanilla Essence

METHOD:
1. Beat egg whites at high speed until soft peaks.
Add in sugar gradually & beat until stiff.
Add in VE, choc chips & cornflakes.

2. Drop 1 tsp into paper cups.
Bake at 130C for 30-45 min until surface is dry.

BAHAN2:
115ml Telur Putih
210g Gula Aising
225g Coklat cips
140g Cornflakes
1/2 tsp Vanilla Essence

CARA2:
1. Pukul telur putih sehingga berbuih pekat.
Masukkan gula sedikit2, sambil di pukul, sehingga telur bertanduk.
Campurkan VE, coklat cip & cornflakes.

2. Masukkan 1 st ke ldm cwn kertas.
Bakar 130C selama 30-45 min sehingga kering.

Hi, I'm Backed with My Hari Raya Goodies

Hello everyone.... It has been such a long break from blogging. I was backed from kampung more than a week ago but been extremely tired and busy after return. Hey, let me give you some Hari Raya treat then. Herewith, what we prepared recently during Hari Raya breakfast for our colleague. All the cakes and dishes were prepared by myself. Almost 70 people turned-up for our two-hour open house during the office hours.

Selamat Hari Raya 2010

Salam untuk semua kekawan dan buat makluman ini adalah entry terakhir sebelum Along berangkat ke kampung untuk berhari raya.  Di kesempatan ini, terima lah ucapan untuk semua kekawan dan pengunjung2 yang akan menyambut Hari Raya AidilFitri 2010. Maaf & ampun di pinta jika ada kesalahan atau tersilap kata atau pun kekurangan dalam apa jua bentuk yang di siarkan di blog ini yang mungkin tidak di sedari dalam keadaan kesibukan seharian dan tugasan2 yang lain.
