Simple Mixed Tom Yum

Lately I had terrible fatigue (may be because of lack of sleep for such a long duration and overloaded works at office too and perhaps ageing..?) and too often too tired to cook many dishes for dinner. So this time, we ended up with one dish style with chicken, seafood, potato & vegetables dumped into Tom Yum Soup.... (actually we had simple fried chicken too).

Here an instant recipe:

INGREDIENTS:
2-3 Tom Yum cubes (Knorr)
2 liter Water
Some chopped Chicken
Some Shrimps, Squids, Fishballs
Mixed Vegetables- Mustard leaves, Carrots, Jack beans, Cabbage, Tomatoes, Potatoes, Big Onion, Chili Padi, etc
1 Lemongrass - bruised
3 Kafir Leaves
Salt

METHOD:
Boil water and Tom Yum cubes.
Add in chicken, potatoes, carrots, lemograss & shrimps and boil until tender.
Add the rest of ingredients & serve immediately.

Sarawak Grilled Chicken Wings

In Sarawak, stalls selling grilled chicken wings are common scene everywhere compared to in West Malaysia. The unique feature is the hot red colour.

INGREDIENTS:
8 pieces Chicken Wings
2-3" Ginger*
2 cloves Garlic* (* blended)
3 tbsp Chili Paste
1 tsp Freshly Grounded White Pepper
2-3 tbsp Honey
2-3 drops Red Color
Salt

METHOD:
1. Marinate wings with all ingredients.
2. Grilled until cooked.

Sambal Tumis Cuttlefish (Sotong Katak)

I never tried this type of cuttlefish (called Sotong Katak in Bahasa Malaysia) but I was very curious when I saw fresh ones in the fish stalls. The fishmonger convinced me that it tastes good with thicker flesh. For testing, I only bought one cuttlefish which weighted almost 1 kg and cooked Sambal Tumis above. My hubby likes it but not me... don't like the texture which is thicker & firmer compared to squids.

I forgot to snap the cuttlefish photo but here is what I can find using Google search (hope the owner does not mind me borrowing). I'll replace with my own photo when I manage to snap later.

Black Getas

Actually I made this a couple of days ago from the leftover dough of Black Kuih Bom. The recipe produces a big batch of kuih so I reserved some of the dough & kept it in a fridge until ready for next consumption. To make kuih Getas I added a handful of fresh grated coconut to the dough, pressed a small portion into disk shape and deep fried (it puffed up slightly due to baking powder). Once all done I coated them with crystalised sugar syrup. I cannot describe how delicious the kuih was with the black glutinous aroma and spongy texture - I was non-stop drooling in each bite!! Will make this again in the coming weekend on the family demand.

Liana 10 Months

Auntie2 ramai yang rindu dengan Liana tanya kenapa lama dah Liana tak muncul. Ni lah sebab nya, tengok kat atas tu menjerit2 kalau letak, asyik nak dokong jer.... Liana sekarang dah boleh berjalan 5-6 langkah sambil lompat2...hehe. Bercakap pun bukan main petah...

On her 10th month birthday, dady bought Liana a pair of jeans & ruffled blouse from KL. Tengok lah tu dapat lah bergaya seminit jer.... special posing buat auntie2 semua especially mak mertua ku (laling darwish jugek...hehe), Auntie Zana and auntie2 semua yang bertanyakan khabar Liana.

Kuih Bom Dayang Senandung / Kuih Bom II

These black boms really exploded hard but I learnt the lesson fast - lift them out from the frying oil just before it start cracking & explode and it works. This is the whole family's favourite plus it is a rare species (cursed Dayang Senandung.... hehe)

So this morning, we had kuih-muih style of breakfast (this kuih besides Bahulu Batik) which is light and after messing up the kitchen so much, I now have to think what to cook for lunch....huuuuu...

The recipe is taken from an Indonesian website and got to guess for the translation.

(I did not count but guess it makes >30 small pcs)
INGREDIENTS:
300g Glutinous Flour
60g Black Glutinous Flour
60g  Tapioca Flour
3 tsp BP
400ml Hot Water

3tsp Shortening
Sesame seeds for coating
Mung Bean Paste for filling (ready made)


METHOD:
1. Mix all dry ingredients & rub in shortening.
Gradually add in hot water to form a dough.

2. Take a small portion & fill with mung bean paste.
Shape it round & roll in a bowl of sesame seeds.

3. Deep fry in a lot of oil above small fire until cooked.
Drain on a kitchen towel.

Bahulu Batik Mekar Kukus

Tengok Dayang Jack, Nor, Zana & ramai lagi berlumba2 buat apam mekar, Along pun teringin juga nak buat walaupun bab2 mengapam ni memang selalu fail. Tak sabar2 menunggu hari minggu & hari ni awal2 pagi dah bangun mengaduk benda ni.... hasil nya lihat lah... bukan mekar setaman tapi menggunung macam volcano yg nak meletup.... hehehe. Apa2 pun memang gebu & sedap.

(8-10 biji)
BAHAN2:
125g Tepung Gandum*
1 sk BP* (* ayak)
115g Gula Halus
1/2 sk penuh Ovalette
4 1/4 sb Susu Cair
1 biji Telur grade A
1/2 sk Esen Vanilla
1 sk Pes Coklat
(atau 1 sb koko dibancuh air jadikan pes)

CARA2:
1. Pukul kesemua bahan2, kecuali pes coklat, sehingga pekat. 
2. Adunan dibahagi dua dan bubuh choc pes pd satu bahagian.
3. Bubuh adunan berselang-seli dlm papercup yg tersedia hingga habis.
4. Kukus hingga mekar selama 10-15 min dgn api kuat.
5. Sejukkan kuih dan boleh disajikan.

Herewith in English as requested:
INGREDIENTS:
125g Flour*
1 sk BP* (* sift) 
115g Sugar
1/2 tsp Ovalette
4 1/4 tbs Milk
1 Grade A Egg
1/2 tsp Vanilla Essence
1 tsp Choc paste

METHOD:
1. Beat all ingredients, except choc paste, until thick. 
2. Divide into two portions & color one with choc.
3. Spoon into paper cups alternately.
4. Steam 10-15 min above big fire.

Fried Cashew Nuts

I bought a 1kg packet of cashew nuts before CNY but only few days ago managed to get them into a wok. This is a simple snack to prepare. Deep fry the cashew nuts in not too hot oil until golden & crispy. I added some Ikan Bilis (microwaved) & fried garlic slices.... nyum2.... nice snacks!
(psssst.... no salt is necessary).

Stir Fried Corned Beef

This is our family favourite. I normally bought corned beef made from Brunei as I can be confident of its halal status and furthermore the quality is superior. There are two types, frozen & canned corned beef. To cook simply fry some chopped chili & onions & then add in corned beef & cook until it dries up (some people like it wet). Add some mixed vegetable & in the above I added some frozen peas. Serve with rice or bread.

Sweet Potato Curry Puffs II


Asyik dok teringat nak makan karipap dah berapa minggu tapi asyik tertangguh. Nak buat apa2 pun kena tunggu hujung minggu baru ada kelapangan sebab hari2 biasa pulang kerja pun tak menentu masa, just cukup masa untuk masak makan malam. Keledek dalam peti ais tu dah berapa minggu, so balik kerja kelmarin, Along pun bertekad buat juga lah sambil2 masak lauk untuk dinner. Bila dah siap tak larat pulak nak pos gambar & blogging... lotih ler... Liana lak meragam sampai tengah malam takmau tidor.

Kali ni Along cuba respi Noreen untuk kulit - memang rangup. Maceh ya, izinkan Along kongsi respi tu kat sini. Untuk inti, Along memang suka inti keledek. Tengok sini untuk respi inti.

(Makes 25)
BAHAN-BAHAN:
500g Tepung
120gm Marjerin
- dicairkan
1 camb Shortening
160-170ml air 
1 st Garam

CARA-CARA:
1. Gaul kesemua bahan sehingga membentuk doh.
2. Bahagikan adunan kpd bola2 kecil.
Leperkan & isikan inti, tutup & klim.
3. Goreng dlm minyak yg banyak dgn api sederhana.

Simpan dalam bekas & fridge untuk goreng breakfast esuk hari nya. Tenguk lah karipap kita yg boncit2...pueh makan buat sendiri....hehe.

Kek Belang Harimau (Tiger Striped Cake)

Tengok kat sana sini semua ada kek marble, Along pun teringin juga nak buat. Unuk kek marble ku yg pertama ni, pilihan hati ku ialah dari rumah HaSue. Kek ni kek asas je, takda bahan2 spesel tapi rasanya sedap, tidak manis & tetap lemak walaupun hanya guna majerin & takda susu. Tektur nya pun gebu walaupun takda letak bahan penaik. Kalau tak cakap orang pun takkan sangka kek ni kek kukus sebab tekstur nya amat gebu.

Maceh bebanyak dengan HaSue yg sudi jawab soalan Along walaupun HaSue tgh 'bercuti' sekejap. Harap Sue cepat2 kembali ke alam maya ni bersama kita semua. Maceh kongsi respi yg marbeles ni... izinkan Along kongsi respi tu kat sini ya. Kalau nak tengok cara2 nak buat belang harimau tu, tengok kat sini.

(8" bulat / 4 segi)
BAHAN2:
330g Marjerin
290g Gula pasir / Sugar
6 biji Telur / Eggs
310g Tepung / Flour
1 st Esen Vanilla
2 sb Serbuk Koko + Coklat Emulco (optional) / 2 tbsp Cocoa Powder + Choc Emulco
Pewarna Kuning / Yellow coloring

CARA2:
1. Panaskan pengukus./ Heat up steamer


2. Pukul marjerin bersama gula pasir sehingga sebati,tidak perlu terlalu kembang.
Masukkan telur satu persatu (penting pukul sebati setiap kali telur ditambah sebelum memasukkan telur seterusnya).
Tambahkan esen vanilla, pukul seketika.
Ayakkan tepung terus ke dalam adunan sambil dipukul sebati.
Beat margarine & sugar.
Add in egg one by one.
Add in EV & flour.
 
2. Bahagikan kepada 2 bahagian.
Warnakan kuning dan satu lagi tambahkan serbuk koko dan coklat emulco.Masukkan adunan berselang seli ke dalam loyang yang sudah di gris marjerin dan ditabur tepung.
Divide into 2 portions & color each with yellow & cocoa.
 
3. Tutup loyang dengan aluminium foil untuk mengelakkan air pengukus menitik di atas kek.
Kukuslah selama 1 jam atau 1 jam 15 minit/sehingga masak. 
Selamat mencuba!
Steam for 1hr & 15min until cooked.

Steamed Hawflakes Layered Cake

Tried this recipe from Y3K book in order to clear some leftover egg whites. Very disappointing result.... the cake is too oily and not too fluffy with egg smell. The photo from the book looks very tempting in contrary to mine... not sure where I did wrong.

Since the result is not up to my minimum expectation, I feel there is no need to share the recipe herewith.

UPDATE:
On request by DayangJack, herewith the recipe anyway.  Who knows may be she has a magic hand... then I can learn from you Dayang. Don't forget to let me know if you tried. For others, let me know if you tried this & successful.

INGREDIENTS:
A:
180g Corn Oil
160g Shortening - melted & cooled
100g Sweetened Condensed Milk
140f Fresh Milk
B:
260g Hong Kong Flour
1tsp Baking Pwder
50g Vanilla Ice-cream Powder
C:
16 Egg Whites
1tsp Cream of Tartar
100g Caster Sugar
D:
Hawflakes

METHOD:
1. Cream A until well mixed.
Add in B.

2. Beat C until soft peaks.
Fold into 1. above.

3. Grease 8" sq tin.
Pour 200g batter & steam 15min.

4. Arrange hawflakes on top of steamed layer - do not overlapped otherwise layers of cake will not stick.
Pour another layer & steam 15 min.
Repeat process until finished (do not arrange hawflakes on the last layer).

5. Cool cake overnight before turning out from tin (HomeKreation: I did not do this).

Chewy Gooey Yummy Brownies

This is really yummy as it is named.... moist & chewy... love it!!

Recipe was taken from Wani but I've halved the recipe as below. Thanks Wani for a superb recipe. Lama nya simpan resipi ni baru dapat nak cuba.

(Makes 8" square)
INGREDIENTS:
125g Butter*
200g Chocolate* (* melted & mix together)
3 Eggs
145g Brown Sugar
1 tsp VE
45g Flour**
50g Coco Powder** (** sifted together)
50g chopped Nuts (I skipped)

METHOD:
1. Beat eggs, sugar  VE until sugar is dissolved.
Add in melted chocolate & butter.
Add in flour & cocoa mixture.
Add in nuts.

2. Line tin with non-stick baking paper extended over the 2 sides.
Bake at 160C for 45 min.

Apam Tepung Beras

It is apam season... you can find apam in most bloggers' houses so it is my second attempt after motivated by Mamafami to try to get over the "Eno Curse".... BUT..... oh no.... Mamafamiiiiiii help meeeeee! I cannot get over the Eno curse... my apams were still full with frackles! Macam putera kena sumpah jadi sang kodok.... hodoh tul!

First time saw this recipe in HaSue's house (original recipe by Watie), so copied (& simplified) herewith.... maceh Sue & Watie! Good recipe produced soft texture except the frackles which seems to be only me having a problem with it.

(Makes 12 ketul)
BAHAN2:
1 cwn Nasi
2 cwn Tepung Beras
1 cwn Gula
1 1/4 cwn Air
1 sk Yis
1 peket Eno

CARA2:
1. Blend nasi dengan air hingga halus.
Masukkan gula, tepung & yis. 
Blend lagi hingga sebati.
Masukkan ke dalam bekas dan tutup rapat. 
Perap 3-4 jam.

2. Selepas diperap kacau perlahan dan masukkan eno, kacau sebati perlahan-lahan (warnakan kalau suka) dan biar sebentar.

3. Panaskan kukusan.
Masukan ke dalam acuan-acuan kecil dan kukus selama 15 hingga 20minit dengan api kuat.

4. Boleh di makan dengan kelapa parut yang dikukus sebentar dan digaul dengan sedikit garam jika suka.

Bubur Arab @ Bubur Lambuk

This was my belated father's favourite. I recalled my mum cooking this almost everyday during Ramadhan on my father's request....

INGREDIENTS:
2 bowls Cooked Rice (can also used uncooked rice)
4 bowls Water
5 Shallots*
2 Garlic*
1" Ginger* (*blended) 
2 tbsp Soup Powder
Some chopped Beef
Some Fresh Shrimps
A bowl of Santan
Vegetables - optional
Salt
Garnishes - Onion Springs, Chinese Celery, fried onions

METHOD:
1. Heat up some oil & fry blended ingredients & soup powder.
Pour in water, beef, shrimps & rice.
Cook in a rice cooker under porridge function until done.
Add in Santan & vegetables & let it boil.


2. Serve with garnishes.

Bruschetta

One of my simple breakfast..... Bruschetta served on a garlic toasted slices & White Cheese.....

INGREDIENTS:
Cherry Tomatoes - cut (ord tomatoes is also ok)
Chopped Garlic
Basil, Parseley, Salt & Pepper
Olive Oil (I used EVOO)

METHOD:
1. Heat up olive oil & saute chopped garlic until fragrant.
Add in tomatoes & the rest.

2. Served with toasted garlic/plain bread.
