Deep Fried Spicy Beef

Made this to compliment other dishes. Usually we had deep fried fish/chicken as side dish but this time I tried it with beef and both my sons like it.

INGREDIENTS:
Beef - sliced thinly 
1" Turmeric Root*
1 tsp Black Pepper*
1 tsp Coriander Seeds*
1" Ginger* (*pounded) 
1 tbsp Chili Paste
Salt, Sugar

METHOD:
1. Rub beef slices with all other ingredients.
2. Marinate for at least 10 min.
3. Deep fry until cooked.

Selain daripada ikan/ayam goreng, sedap juga daging goreng. Memang sesuatu yang berlainan dan sedaaap....

BAHAN2:
Daging - hiris nipis 
1" Kunyit Hidup*
1 st Lada Hitam*
1 st Biji Ketumbar*
1" Halia* (* tumbuk) 
1 sb Cili Mesin
Garam, Gula

CARA2:
1. Gaul daging dgn kesemua bahan2.
2. Perap sekurang2 nya 10 min.
3. Goreng dgn minyak yg dalam sehingga masak.

Asam Pedas Sardine

 Once in a while is nice to cook canned sardine dish. This time let's cook sardine in Asam Pedas... delicious! Refer to my Asam Pedas recipe in here and simply replace the fresh fish with canned sardines. I also added some Daun Kesum.

Cuba lah masak Asam Pedas guna sardin tin, memang sangat sedap. Kalau nak resepi, boleh klik kat sini tapi gantikan ikan segar dengan sardin. Along tambah daun kesum untuk lebih harum.

Fresh Fruit Pound Cake (Kek Butter Buah)

I made this cake for Liana's Barbie Doll Cake several days ago. You can see the mould that I used in the above picture. See here for fully decorated look.The cake is soft and tasty except my fruits were stucked somewhere and too much juice that the bottom part is less fluffy. I think I need to soak in lemon juice a bit longer and then drain out the excess juice. You can skip the fruit totally to produce nice butter cake with this recipe.

INGREDIENTS:
250g Butter
250g Caster Sugar
1 tsp Vanilla Essence (VE)
4 large Eggs
125g Plain Flour*
125g Cornflour*
1 tsp Baking Powder* (*sifted together) 
250g 1/2" cube Fruits (Plum, Apple & Pineapple) + 1 tbsp Lemon Juice

METHOD:
1. Beat butter, sugar & VE until fluffy.
Add in eggs, one at a time while beating.
Add in flour mixture until just blended.
2. Grease bundt pan & pour in mixture.
3. Bake for 1 hour until cooked.

BAHASA MALAYSIA VERSION
Kek butter pound berisi buahan segar. Liana suka makan buah, so buatkan kek ni waktu harijadi dia. Pastikan buahan di perap dgn lemon jus & buagkan lebihan air sebelum di masukkan ke dlm adunan. Kalau tak suka buah, biarkan saja kosong.

INGREDIENTS:
250g Butter
250g Gula Kastor
1 st Vanilla Essence (VE)
4 bj Telur bersaiz besar
125g Tepung Gandum*
125g Tepung Jagung*
1 st Baking Powder* (*sifted together) 
250g Buah2an di potong 1/2" kiub (Plum, Apple & Nenas) + 1 sb Jus Lemon

CARA2:
1. Pukul butter, gula & VE sehingga kembang & putih.
Masukkan telur satu persatu sambil di pukul.
Masukkan tepung sehingga sebati.
2. Gris acuan bundt & tuangkan adunan.
3. Bakar selama 1 jam atau sehingga masak.

Happy 2nd Birthday Liana

 To my sweetie and beloved daughter Liana, HAPPY BIRTHDAY...!!! Momma, Abah, Along, Angah & Usu love you so much and want to see you grow faster..... May Allah protect and bless you everyday and forever.

 This year I made Liana a barbie doll cake. Since Liana love fruits so much and she is refrained from chocolate, I decided to make Fresh Fruit Pound Cake. The decoration was mainly sugar paste and partly fondant. The barbie doll was specially express mailed by Acik Nani from KL. It is my very very first attempt in decorating a barbie doll cake and very satisfied with it.... something for Liana to look back and feel proud of her mum's effort... may not be the best but it came from the bottom of my heart.

Liana actually cut the cake two days ago on Sunday during the gathering I had in my house. See here the makan-makan occasion. Someone commented that Liana's doll on the cake grown bigger year after year (referring to last year cake which had much smaller doll - see here). Syukor, alhamdulillah, Liana has also grown bigger and so fast she is now two years old.

To all aunties out there, much love and hugs from Liana. Thank-you so much for always asking about Liana from time to time.

Kuih Ketupor

I never eaten or heard the name of this kuih until today. We had a farewell party in the office for Pat's early retirement. Many delicious food and kuih were served from the local catering. This Kuih Ketupor was one of the specialties from local Sarawak. It is soooo delicous that I requested 3 pieces to bring home so that I can take photo and share with all of you out there.

The top layer is sweet, very creamy & soft just like the typical kuih talam. The special part is the bottom layer which is unsweetened, coarse texture, crumbly and taste like Putu Bamboo or kuih putu. Something I have not eaten before and a very special combination. I'm hoping that someone who read this will share the recipe with me one day.

Makan-Makan with Friends

 Today we had makan-makan at my house with small group of friends for several occassions - Pat's (early) retirement, Lily's visit from KL and Liana's birthday celebration (2 days in advance).
 Menu for lunch was Saffron Rice, Roti Jala (lesson for Lily), Biryani Chicken, Fried Fish Serunding, Chili Prawns, Cockles Kerabu (by Cik Mal), Mixed Salad.

Yellow Pineapple Pachrey (Nenas Masak Pajeri Kuning)

 After making Pineapple Pancake the other day, I still had two pineappales left. Saw this dish in Kak Rose's house - something I have not had since I left hometown. So decided to give a try.... I forgot to add chili and hence my dish looks very bare. Taste wise not quite what it supposed to be, may be I need to add more sugar.....?

BAHAN2: 
1 small Pineapple - cut & blanche or canned Pineapple
1" Ginger
1 clove Garlic
1 tbsp Dried Shrimps
1/2 tsp Turmeric Powder
Mixed Spices (cardamon, vinnamon stick, star anise, cloves)
1 stp Mustard Seeds
3 Red Chilies
1/2 tbsp Vinegar
Salt, Sugar
2tbsp Oil

METHOD: 
1. Heat the oil and stir fry garlic & ginger until fragrant.
2. Add in dried shrimps, mixed spices & mustard seeds.
3. Add in turmeric powder & some water/liquid from pineapple can.
4. Add in pineapple, chili, salt, sugar & boil for several minutes.

Nenas Masak Pajeri Kuning
Masakan orang dolu2.... dah lama tak makan so cuba respi dari rumah KakRose. TQ Kak Rose. Rasa garam & gula nak kena pandai imbangkan, rasa nya Along punya kurang gula kot..... Alamak, bila tengok gambo, baru tau terlupa bubuh cili...kikiki

BAHAN2: 
1 biji kecil Nenas - potong & celur atau Nenas tin
1" Halia
1 ulas Bwg Putih
1 sudu makan Udang Kering
1/2 st Kunyit Serbuk
Rempah Tumis (biji pelaga, bunga lawang, cengkih dan kayu manis)
1 st Biji Sawi
3 biji Cili Merah
1 sudu makan Cuka
Garam, Gula dan Perasa secukupnya
2 sudu makan Minyak

CARA2: 
1. Panaskan minyak dan tumis bawang, halia dan bawang putih. 
2. Setelah naik bau masukkan udang kering, rempah tumis & biji sawi.
3. Masukkan kunyit serbuk dan sedikit air dari jus nenas.
4. Kemudian masukkan nenas dan lada merah
5. Masukkan garam, gula dan perasa >> tunggu sebentar sehingga mendidih

Dried Wild Mushrooms in Spicy Coconut Broth

 Dried Wild mushroom or in Malay: Cendawan Kukur is very nice to be cooked in spicy coconut broth. I always used skimmed coconut milk for health reason.

INGREDIENTS:
1 plate of Dried Wild mushrooms
2 Shallots*
Some Chili Padi*
1 Green Chili*
2" Turmeric Root* (*pounded) (can replace with 1/2 tsp Turmeric powder)
1 bowl of Thin Coconut Milk
Salt

METHOD:
Place all in a pot & stir all the time until boil & mushrooms is cooked.
Serve with white rice.

Cendawan Kukur Masak Lemak Cili Api

BAHAN2:
1 piring Cendawan Kukur
2 bj Bwg Merah*
Sedikit Cili Padi*
1 bj Cili Hijau*

1 mangkuk Santan Cair
Garam

CARA2:
Masukkan kesemua bhn ke dlm periuk & kacau sehingga mendidih & cendawan sudah lembut.
Hidangkan dgn nasi putih & lauk sampingan yg lain.

Pineapple Pancakes (Penkek Nenas)

 The first time I tasted Pineapple Pancake was in Amsterdam during my Europe tour recently - see here. It tasted really nice that I decided to try to make it for the family to enjoy it. I have created a recipe from basic pancake batter and received 5 thumbs up, including Liana's who finished a whole pancake. My two boys were eating the pancake with repeated "emmmmmmh... so delicious...." and each of them had 2½ pancakes of a dinner plate size.
The darker version (on the right) tastes nicer and crispy.  For crispier result, place extra butter before pouring the pancake batter. The butter will cause the color of the pancake surface becomes brown and uneven but that is what it supposed to look like - it should not look smooth and beautiful golden color like plain pancakes.

I bought quite a young fresh pineapple and hence not sweet enough. So I decided to grill it with butter and brown sugar before adding to pancake batter. The result was superb and made a lot of different to the whole flavour. For extra tasty, serve the pineapple pancake with both palm sugar syrup and maple/pancake syrup as shown in the photos.

INGREDIENTS:
1 whole Pineapple or Canned pineapple ring
250g Plain Flour
625ml Fresh Milk
3 Eggs
2 tbsp Melted Butter
2 tbsp Sugar
Pinch of Salt

METHOD:
1. Peel pineppales and remove the "hairy noses" by slicing shallowly along the nose line in spiral direction.
After peeled, slice it into thin circles.

2. To grill the pineapple rings, melt some butter in a flat pan / griddle.
Place pineapple rings and sprinkle some brown sugar.
Flip the pineapple rings occasionally & sprinkle more sugar/butter as necessary.
Once the pineapple rings are soften and coated with caramalised sugar, lift it & place in a plate.
Note: Skip step 1 & 2 if using canned pineapple but I can assure you the taste worth 5 times the effort. 

3. Blend the rest of the ingredients to make pancake batter.

4. Place a dollop of butter onto a griddle pan.
Place a couple of pineapple rings and pour pancake butter on it.
Cover until bottom part is brown.
Flip and cook just for a while before lifting it.

5. Serve immediately with maple/pancake syrup together with palm sugar syrup.
To make palm sugar syrup, just boil some coconut milk with some palm sugar, white sugar & screwpine leaf.

BAHASA MALAYSIA VERSION
Along hasilkan resipi ni ilham dari Amsterdam sewaktu makan di sana baru2  ni. Memang sedap sesangat dan pujian dari seisi keluarga. Tak rugi mencuba. 
Nenas yg Along beli tu agak muda, jadi untuk rasa yg lebih istimewa, Along panggang nenas dgn butter & gula perang dahulu dan ini menghasilkan satu perisa yg sungguh sedap. Lebih enak drpd menggunakan nenas tin. Cubalah jika anda nak nak tau keenakkan nya....

BAHAN2:
1 biji Nenas / Nenas Tin
250g Tepung Gandum
625ml Susu Segar
3bj Telur
2 sb Butter Cair
2 sb Gula
Secubit Garam

CARA2:

1. Kupas nenas & buang "bulu hidung".
Hiris nipis bentuk bulat.

2. Untuk memanggang nenas, panaskan butter di atas kuali leper pemanggang.
Letakkan hirisan nenas & taburkan gula perang.
Balik2an kepingan nenas & taburkan gula/butter - agak2 jgn terlalu banyak.
Angkat apabila nenas sudah lembut & di saluti gula karamel.
Nota: Abaikan step 1 & 2 jika menggunakan nenas tin tetapi berbaloi guna nenas fresh yg terbukti lebih sedap.

3. Blend kesemua bhn2 utk membuat adunan penkek.

4. Panaskan sesudu butter ke atas kuali leper.
Letakkan 2 keping nenas & tuangkan adunan penkek ke atas nya.
Tutup sehingga bahagian bawah garing.
Balikkan & masak sebentar sebelum di angkat.

5. Hidangkan segera dgn sos gula melaka dan sirap penkek/mepel. 
Utk membuat sos gula melaka: masak santan + gula melaka + gula putih + daun pandan.

Thai Sweet & Sour Fish (Ikan Masak Masam Manis ala Thai)

 My SIL sent some fresh Belanak from kampung which is my hubby's favourite fish (very rarely found in Miri). She packed it in a cool box and put it in an express bus first thing in the morning which reached Miri by end of the day. As my hubby likes it simply deep fried, I made some sweet sour sauce with Tom Yam flavour to accompany the fried fish.... whole plate of dish was wiped cleaned after the dinner.

INGREDIENTS:
Whole Belanak Fish
3 cloves Garlic*
1 slice Ginger* (* pounded) 
1 Lemongrass - bruised 
2 tbsp Chili Paste
1 tbsp Tom Yum Paste
2 tbsp Tomato Sauce
2 tbsp Chili Sauce
1 tsp Plum Sauce
3 Kaffir Lime Leaves - sliced thinly 
Mixed Veg - Cauliflower, Carrot, Big Onion, Tomato, Green Chili
Salt & Sugar

METHOD:
1. Rub fish with salt & turmeric powder & deep fry until cooked.
Place fish in a serving plate.
2. Heat up 2 tbsp oil & stir fry pounded ingredients & lemongrass.
Add in chili paste & stir for a minute.
Add in all type of sauce and some water & let it boiled.
Add in salt, sugar & vegetables.
Pour onto fried fish once cooked.
3. Serve immediately and with rice.


BAHASA MALAYSIA VERSION
Masakan Ikan Belanak Masam Manis dengan perisa Tom Yam. Memang enak sangat...

BAHAN2:
Ikan Belanak
3 ulas Bwg Putih*
1 hiris Halia* (* tumbuk) 
1 btg Serai - tumbuk
2 sb Cili Mesin
1 sb Pes Tom Yam
2 sb Tomato Sauce
2 sb Chili Sauce
1 sk Plum Sauce
3 helai Daun Limau Purut - hiris nipis
Sayur Campur - Bunga Kobis, Karot, Bwg Besar, Tomato, Cili Hijau
Garam & Gula

CARA2:
1. Lumur ikan dgn garam & serbuk kunyit. Goreng sehingga masak.
Letak ikan ke dlm pinggan hidangan.
2. Panaskan 2 sb minyak & tumis bhn tumbuk & serai sehingga wangi.
Masukkan pes cili & kacau lebih kurang seminit.
Masukkan semua jenis sos  dan air secukup nya.
Didihkan & masukkan garam, gula & sayur.
Tuangkan ke atas ikan goreng tadi.
3. Hidangkan segera dgn nasi putih yg panas.

Smooth Loofah & Egg Soup (Sayur Labu Air & Telur)

 Something simple but we in the house like it......

INGREDIENTS:
1/2 Smooth Loofah - peel & cut 
1 Red Chili*
2 Shallots*
1 clove Garlic* (* sliced) 
6 Fish Balls - sliced 
3 Eggs
Salt & Pepper

METHOD:
1. Heat up 2 tbsp oil & stir fry sliced ingredients* & fish balls until fragrant.
Add 3/4 liter water, salt & pepper & let it boiled.
Add in loofah & cook until soften.
Break in eggs & do not stir until they are cooked.

2. Serve immediately with rice and preferably also Sambal Belachan.


BAHASA MALAYSIA VERSION
Sayur Labu Air & Telur
Masakan harian yg mudah tapi sedap. Best makan dgn nasi putih, boleh di hirup2.

BAHAN2:
1/2 biji Labu Air - kupas & potong kecil
1 biji Cili Merah*
2 ulas Bwg Merah*
1 ulas Bwg Putih* (* hiris) 
6 biji Fish Balls - hiris
3 biji Telur
Garam & Serbuk Lada Hitam

CARA2:
1. Panaskan 2 sb minyak & tumis bhn2 yg dihiris* & fish ball sehingga layu.Masukkan 3/4l air, garam & serbuk lada, biarkan menggelegak.
Masukkan sayur labu & masak sehingga agak lembut.
Pecahkan telur ke dlm masakan sayur & jangan kacau sehingga telur masak.

2. Hidangkan semsa masih panas dgn nasi. Enak jika ada Sambal Belacan.

Chicken & Pegaga Masak Lemak

 Daun Pegaga or known as Pennywort is Malay's favourite salad. This time I cook it with chicken in spicy green broth instead of eating raw with sambal.

INGREDIENTS:
1/2 Chicken - cut 
1 tsp Turmeric Powder (for frying chicken) 
1 bunch Pegaga/Pennywort
4 Shallots*
Chili Padi*
1" Turmeric Root* or 1 tsp Turmeric Powder (* pounded) 
1 Lemongrass - bruised 
1/2 pot Coconut Milk
Salt

METHOD:
1. Rub chicken with salt & turmeric powder.
Deep fry until cooked & keep aside.

2. Place the rest of ingredients, except Pegaga, in a pot & stir until boiled.
Add in chicken & Pegaga & cook another few minutes until vegetable is soften.

3. Serve with white rice.

BAHASA MALAYSIA VERSION
Daun pegaga pun sedap juga di masak gulai lemak & ayam goreng.

BAHAN2:
1/2 Ayam - potong2
1 st Serbuk Kunyit (utk ayam goreng) 
1 ikat Pegaga
4 ulas Bwg Merahs*
Cili Padi*
1" Kunyit Hidup* atau 1 st Serbuk Kunyit (* tumbuk) 
1 btg Serai - di ketuk
1/2 periuk Santan
Garam

CARA2:
1. Lumur ayam dgn garam & serbuk kunyit.
Goreng ayam sehingga masak. Ketepikan.
2. Masukkan kesemua bahan2, kecuali pegaga & ayam, ke dlm periuk.
Kacau sehingga menggelegak.
Masukkan ayam & pegaga, masak sehingga  pegaga lembut sedikit.
3. Hidangkan dgn nasi putih.

Chili Coated Spring Rolls (Popiah Goreng Bercili)

 My hubby and two boys have been encouraging me to recontinue my blog after my recent announcement. Although I think I made the right decision to quit, the truth is I missed it so much.Updating the blog is time consuming which taking so much of my limited leisure and I felt it is time for me doing something else and more valuable in life (although I still do cooking/baking daily for the family). Thanks for those who expressed support and also suggestion in here, via email and in persons. I'm surprise how much this blog is valued and hence the reason for me to come back.

 Here is sharing what I made for breakfast during my break. English translation to be updated upon request.

BAHASA MALAYSIA VERSION

BAHAN2: 
1 ulas Bwg Putih - cincang 
1 tangkai Cili Merah - hiris halus 
1 labu Bwg Besar - racik 
200g Udang - cincang (Along ganti dgn 50g udg kering) 
1 btg kecil Carrot - sagat/potong halus 
1 cwn Kobis - racik halus 
5 btg Kacang Panjang - potong halus 
1 sb Minyak
Garam
Kulit Popiah 8.5" square

CARA2:
1. Panaskan minyak dan tumiskan bawang putih, cili dan bawang besar sehingga wangi.
Masukkan udang dan carrot, kobis, kacang dan garam.
Kacau rata & masak sebentar sahaja.
Angkat & sejukkan.

2. Gulung 1 sb inti dgn kulit popiah  & gamkan dengan perekat tepung.
Buat sehingga habis.

3. Goreng popiah di dalam minyak yg banyak dan sederhana panas sehingga kuning.
Toskan minyak & angkat.



SIRA CILI:
1 ulas Bwg Putih - tumbuk
2 sb Cili Mesin
2 sb Cili Sos
1/2 sb Cuka
1 sb Gula
Garam
Bijan yg di sangai

CARA2:
Panaskan 1 sb minyak & tumis bwg putih, cili sehingga wangi.
Masukkan bhn2 yg lain & kacau sehingga pekat.
Masukkan popiah goreng & gaul rata.
Angkat & di hidangkan segera.

Talam Ca-Ca

 Finally made this after thinking about it for so long.... nice kuih with top layer flavored with rose essence and Ca-Ca bits at the bottom - whole family like it and also brought some to office for breakfast.

Modified as Talam CaCa and halved the portion to fit the smaller size as below
Size: 8" round

LAPISAN BAWAH:
50gm Ca Ca bits (rebus dahulu dan toskan)
90g Tepung Beras
125ml Santan Pekat
225ml Air
1/2 tbsp Tepung Hoen Kwe(putih)
60g Gula
1/2 tsp Garam

CARA2:
1.Campurkan semua bahan kecuali CaCa bits, gaul sebati dan tapis ke dlm periuk.
2. Masak sehingga naik wap, masukkan CaCa bits dan gaul rata.
3.Tuang ke dalam loyang dan kukus selama 25 minit.
4.Cakar dgn garpu apabila dah masak supaya lapisan atas tidak lekang.

LAPISAN ATAS:
75g Tepung Gandum
125g Gula
1 1/2 biji Telur
125ml Santan pekat
250ml Air
1/4 tsp Garam
1/2 tsp perisa rose

CARA:
1. Campur semua bahan, gaul sebati & tapis ke dalam periuk.
2. Masak hingga naik wap dan tuang ke atas lapisan bawah.
3. Kukus selama 30 minit.
4. Tunggu hingga betul2 sejuk baru di potong dgn pisau plastic.

Tongkol Gulai Gayung

 Gulai Gayung is a very mild version of curry without using any curry powder. The best fish to cook into this gravy is Tongkol or Kembung. This is my favourite dish from Pantai Timur.

INGREDIENTS:
1/2kg Tongkol Fish
4 tbsp Chili Paste
5 Shallots*
1 clove garlic*
1" Galangal*
1 Candle nut*
2 tbsp Coriander Seeds*
1 tsp Cumin Seeds* (* blend)
1 Lemongrass - bruised 
1 bowl Coconut Milk
1 tbsp Kerisik
1 Tamarind piece
Salt

METHOD:
Heat up some oil & stir fry blended ingredients & lemongrass until fragrant.
Add in oconut milk, kerisik, tamarind piece, salt; stir until boil.
Add in fish and stir occasionally until done.

Gulai Gayung ialah masakan Pantai Timur yg sedap di gandingkan dhn nasi dagang ataupun nasi putih biasa.

BAHAN2:
1/2kg Ikan Tongkol
4 tbsp Chili Paste
5 bj Bwg Merah*
1 bj Bwg Putih*
1" Lengkuas*
1 Buah Keras*
2 tbsp Ketumbar Biji*
1 tsp Jintan Putih* (* blend)
1 btg Serai - ketuk
1 mangkuk Santan
1 sb Kerisik
1 Asam Keping
Garam

CARA2:
1. Panaskan sesenduk minyak & tumis bhn2 blend & serai sehingga wangi.
Masukkan santan, kerisik, asam keping & garam; kacau sehingga menggelegak.
Masukkan ikan & kacau sekali-sekala sehingga masak.

2. Hidangkan dgn nasi.

Ayam Kalasan Berseri

 Tonite I tried one special dish from Ummi but I saw it at Cik Manggis's house. Ten thumbs up from all of us in the house....!! I think this will be a classic dish if served to special guests. If not told, no one can guess the crumbs are coconut because it is so crispy and tasty. Thanks Ummi & CM for sharing such a marvelous recipe.

INGREDIENTS:
1/2 Chicken - cut into medium size
1 cup Grated Coconut
1/3
cup Water
2 tbsp Coriander Seeds*
2 tbsp White Pepper Corns*
(**grind)
5 Lemongrass**
1" Ginger**
1" Turmeric Root**
(**blend with a bit of water)
Salt

METHOD:
1. Place all ingredients in a pot/wok & cook until almost dry.
2. Drain the chicken & spices separately.
3. Heat up oil for deep frying & fry chicken until golden in color.
Dish out & arrange in a plate.
4. Using the same oil, deep fry the spices until crispy & golden color.
Drain & sprinkle over the chicken.

BAHASA MALAYSIA VERSION
Wow...... sedap sangat lah respi Ummi ni & juga pandai nya tukang masak ni ya.... (heheeeee.... masuk bakul jap, jangan marah...). Semua dalam rumah ni selera betul makan nasi lauk ayam goreng ni & sayur masak lemak, tak sempat nak tumbuk sambal belacan, kalau tak lagi terangkat pekena dgn sayur lemak tadi tu....hehehe.

BAHAN2:
1/2 ekor Ayam - potong sederhana saiznya
1 cwn Kelapa Parut
1/3
cwn Air
2 tbsp Biji Ketumbar*
2 tbsp Lada Putih*
(**kisar kering)
5 btg Serai**
1" Halia**
1" Kunyit Hidup**
(**kisar basah)
Garam

CARA2:
1. Masukkan kesemua bahan ke dlm periuk/kuali & masak sehingga agak kering.
2. Angkat ayam dan toskan. 
Kemudian toskan juga campuran kelapa parut dan rempah-rempah tadi dalam bekas berasingan.
3. Panaskan minyak dalam kuali dan goreng ayam hingga kuning keemasan. 
Angkat dan letakkan ayam ke dalam pinggan yang sesuai.
4. Kemudian goreng pula bahan kelapa parut dan rempah hingga bertukar warna kuning keemasan serta berserbuk rangup (awas jangan sampai hangus). 
Angkat dan toskan minyak.
Taburkan serbuk kelapa tadi ke atas ayam dan rata-ratakan. 
5. Sedia untuk dihidangkan.
