Beef & Barley Stew

This delicious Beef & Barley Soup can be prepared with no sweat using slow cooker - just dump everything in it, no frequent check necessary and ready by the set time! That's what I did for hubby's BBQ last week when energy level is low (sorry if anyone been waiting this long for the recipe).
When I made it, I simply threw whatever crossed my mind with instinct without any specific recipe. Now a week later, I hope I can recall it correctly.... Bottom line is, use your creativity for this sort of meal!

By: Roz@HomeKreation
Serves 5-6 persons
INGREDIENTS:
500g Beef* - cut 2" cube
100g Pearl Barley
1 Big Onion
1" Ginger - bruised
1 tsp freshly ground Black Pepper
1 Carrot
2 tbsp Butter
2 tbsp Flour
100ml Fresh Milk
Fresh Parsley - chopped
Salt
(* I love the beef parts that contain some muscles and my favourite is beef shank)

METHOD:
1. Place clean beef, barley, onion, ginger, black pepper, salt & 1½ liter water into a slow cooker pot.
Set to high (4 hours) or slow (whole day) until beef is tender.
Add in carrot in the last 1 hr of cooking.
2. Melt butter and mix in flour until dissolved & gradually stir in milk.
Pour into the cooking stew & cook for another 30-60min.
Add in chopped parsley and let the stew sit in the pot until served.
3. Serve with garlic/plain bread.

Resepi ni dah lapuk seminggu tapi baru hari ni dapat nak update blog - ingat tak Along ada pos pasal menu BBQ untuk birthday hubby. Maaf ler kalau2 ada yg menunggu lama ya. Along buat ni guna slow cooker, senang tak payah nak mengadap dapur lama2 tapi kena rancang awal2 lah. Kalau takda slow cooker, boleh masak macam dalam periuk biasa tapi akan mengambil masa yg lebih pendek & kena hadap takut meruap atau air terkering.

Saiz hidanga: 5-6 org
BAHAN2:
500g Daging Lembu* - potong 2" kiub
100g Biji Bali
1 bj Bwg Besar
1" Halia - di ketuk
1 st Lada Hitam yg di tumbuk
1 btg Karot
2 sb Butter
2 sb Tepung Gandum
100ml Susu Segar
Fresh Parsley - cincang
Garam
(* Along suka guna daging berurat, Mak Along panggil Daging Ketin)

CARA2:
1. Masukkan daging, bali, bwg, halia, lada, garam & 1½ liter air ke dlm periuk slow cooker.
Set pada suhu "high" (4 jam) atau "slow" (seharian) sehingga daging lembut.
Masukkan karot sejam terakhir masakan.
2. Cairkan butter & masukkan tepung sehingga sebati.
Masukkan susu sedikit2 sambil di kacau sebati.
Tuangkan ke dlm stew & masak selama 30-60min lagi.
Masukkan daun parsley dan tutup sehingga perlu di hidangkan.
3. Hidangkan dgn roti kosong atau roti bwg putih.

TQ All for My Birthday Wishes

Alhamdulillah, yesterday was my 47th birthday and I had great time.... one of the best birthday celebration! First of all, syukur ke hadrat ilahi di kurniakan kesihatan, kebahagiaan, kejayaan, rezeki dan semuga lebih panjang umur untuk tingkatkan lebih ibadat selepas ni.

This year, my birthday celebration is complete as AlongRiz is home during his summer vacation. The kids surprise me with a huge Secret Recipe birthday cake and gifts from their own pocket money. My hubby spoilt me with my chosen gifts - La Gourmet cast iron cooking set and I thought that was it.... on my birthday itself there was another one.... Habib diamond ear-rings! Hubby also gave a dinner treat at the newly opened Meritz Hotel (Grand Old Lady restaurant) to celebrate triple birthday celebration for me, himself & AngahRuz.

Birthday sensation will not be complete without wishes from relatives and friends. I was poured with more than 200 greetings from phone calls, sms, emails and facebook.... masyaallah... thanks so much to all for the wishes and greetings! I felt very overwhelmed! Some friends also bought me gifts - thanks to Mala for lovely silk tudung, Salviana for silk suits, Audrey for cute jewel box mailed from KL!

Today I was surprised by my colleague in the office with birthday song along a Secret Recipe Cheesecake (thought they forgot yesterday but they actually waited until today because I was in meetings). It was a joint birthday celebration for me, Daphne & Joanna who were born in June. Thanks all, for your thought & treat despite extremely busy weeks during the peak period.

Special thanks to all my cyber friends for wishes and below greeting cards posted at Facebook, love ya all:

Red Velvet Cake with Cream Cheese Frosting

As what I shared earlier, this cake was for my hubby's special birthday. I wanted to make something that symbolises love and sincerity and therefore an own made heart-shaped Red Velvet Cake will be nice. Besides that, it tastes fabulous after sandwiched with cream cheese frosting.

I tasted Red Velvet cake for the first time when I was staying in Pullman Hotel, Kuching last year. The moist cake was thinly sliced and layered with tasty cream cheese frosting - I fell in love with it straight away and determined that I will make it one day. I'm so happy that I made this cake and satisfied with the taste. Please ignore the ugly look - it was such a rush to bake & decorate the cake in one afternoon. The cake was sliced while it was warm - it will be more even layers and less crumbly if I could wait until it sets properly but I wanted to make sure I could finish & and hide it before my hubby return from work for a little surprise.

Recipe is simplified/retyped for my own ease of reference
Size: 9" heart shape
INGREDIENTS:
250g Cake Flour (I used HongKong Fl)*
½ tsp Salt*
15g Cocoa Powder* (* sifted)
113g Unsalted Butter
220g Sugar (original recipe 300g)
2 Large Egg
1 tsp Vanilla Essence
240ml Buttermilk** (Milk + 1 tbsp Vinegar & stand 10 minutes before used)
1 tbsp Red Coloring** (** combined)
1 tsp White Vinegar 1 tsp Baking Soda

METHOD:
1.  Beat butter & sugar until fluffy.
Add in egg, one at a time, beating well after each addition.
Add in vanilla essence and beat until combined.

alternately, in three additions - beginning and ending with the flour.

2. In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

3. Divide the batter evenly between the two prepared pans.

Bake in a preheated oven 180C for approximately 25 minutes, or until a toothpick inserted in the center of the cakes comes out clean.
Cool the cakes completely, wrap in plastic and place the cake layers in the refrigerator for at least an hour or overnight (this is to make filling and frosting the cakes easier).

4. Slice each cake into 2 layers, so 4 layers in total.
Sandwich each layer with cream cheese frosting.
Finally coat all over cake with frosting & deco as you like.

Birthday Cake & BBQ for Hubby

Yesterday was my hubby's 50th birthday.... such a big and special milestone.... in few more years I'll be joining him into the 50's as well.... I thought the family should do something to celebrate this special number.... I took one day leave to buy him present and prepare something - the above cake and a family BBQ dinner....  We also plan to dine at a hotel next week for joint birthday celebration for three of us (including mine & AngahRuz's).

Can you guess what cake is it? Check out my next posting for the answer and also more photos of it. I don't think I made it beautifully but what matters it comes from my heart and hands..... my hubby appreciated it so much!

Chocolate Granola Brownie Bars

I categorize this as healthy bars..... each bite has some cereals and nuts in it and most of all it has low calories. It is also very easy to prepare in less than 10 minutes. The texture is very crumbly and may be a bit dry (but slightly moist) if you compare to typical chocolate cakes/bars but I have no problem to like it. I actually baked this for my husband as today is a Father's Day and he likes it.....!

TQ to a friend, MN who gave us the Granola cereal during her visit to our open house about 6 months ago... yeah, that was quite long time but it has not expired yet. My children ate some of it as snacks and asked them to keep some for me to bake this.

Basil Sweet Sour Fish (Ikan Masak Masam Manis Daun Selasih)

No one in the house will complain even if I were to cook Sweet Sour Fish everyday.... of course I will not insanely cook the same dish everyday... not even for two days in a row.... but that is just to describe how much the boys in the house love it. Once they see it came out from the kitchen, the fist word was "hooray!".

This time I tried to make slight variation than the usual sweet sour dish. You can search few versions that I posted earlier. Today's version is flavored with fresh basil leaves that I plucked from my very own garden.
