Nasi Goreng Dabai II (Dabai Fried Rice II)

 This time I'm making use of salted Dabai from my MIL instead of fresh ones (as in the earlier post) with beef and water spinach as other main ingredients.... woooo super delicious!! Hubby & UsuRaz enjoyed it so much too!

Recipe in English will be posted upon request.... I'm so tired as I just finished making some cookies just now.


BAHASA MALAYSIA VERSION
Along syok sendiri.... Nasi Goreng Dabai ni sedap sangat... ikutkan hati mau nak tibai 3 pinggan tapi sabor2 kuatkan iman, dua pinggan pun dah boyot....hehehe. Kali ni Along guna dabai masin yg MIL kasi & campur daging & kangkung.... best in the world. Sebelum ni ada juga entri Nasi Goreng Dabai tapi Along guna dabai fresh.

BAHAN2:
3 cwn Nasi
~100g Daging Lembu - hiris2 
1 bj Bawang Besar - hiris nipis 
2 sb Cili Mesin
2 bj Telur
3 ulas Bwg Putih - cincang 
3 sb Dabai Masin
3-5 sb Kicap

3 sb Sos Tiram
Sayur Kangkung
Garam, Lada Sulah

CARA2:
1. Gauilkan nasi dgn garam & lada sulah.
2. Panaskan 1 sb minyak & goreng hancur telur & angkat.
3. Panaskan beberapa sudu minyak & goreng bwg besar sehingga garing. Angkat.
Goreng bwg putih dalam minyak yg sama sehingga wangi.
Masukkan cili mesin & goreng sehingga garing.
Masukkan daging & kacau sehingga masak.
Masukkan kicap, sos tiram & dabai masin. Kacau rata.
Masukkan kangkung, nasi, telur & bwg goreng.
Gaul sehingga rata.
4. Hidangkan dgn hirisan cili & keropok ikan.

Steamed Fruit Cake II (Kek Buah Kukus II)

 Look no further for moist and delicious fruit cake, you already found one here... perfect to my liking! I made three cakes in a row for CNY gifts for friends. One of them collasped on the floor the moment it came out from the steamer due to my own careless action.... I was too sleepy when the cake was done at midnight & my eyes were half opened.... I didn't realize the cake was placed at the edge of the kitchen cabinet.... I was shocked and frustrated that night but my hubby was happy that he had a chance to taste the hot cake!

Size: 8"square
INGREDIENTS:
250g Butter 150g Brown Sugar
3 Eggs (Grade A) 
375g Mix Fruits*
300g Flour*
1 tsp Sodium Bicarbonate*
1
tsp Cream of Tartar* (* combined) 
150g Sugar (for making caramel) 

METHOD:
1. Beat butter and brown sugar until fluffy.
Add in egg one by one while beating slowly until well combined.
Add in mixed ingredients marked * until well combined.
2.  Make caramel from 150g sugar & pour into cake batter right away.
Mix it fast before it crystalised.
3. Pour batter into lined and greased tin.
Cover with aluminium foil & steam 4 hours until done.

Kek kukus Cik Mat ni memang best dan puas hati sangat.... kek yang lembab, manis sederhana & buah2an yang cukup rasa memang amat sempurna untuk perayaan atau kasi adiah pada kawan2 semperna CNY ni. TQ ya Mat, resepi Mat memang mantop! Along buat tiga biji kali ni nak kasi kat kawan2. Yang sebiji pula terhempas ke lantai.... lama sgt mengukus sampai tgh malam... ngantuk amat waktu tu.... mata pun hanya separuh buka... waktu keluarkan kek dari periuk tak sedor terletak kek kat ujung bucu.... aduhhhhh... sedih nya selepas susah payah, lingkup camtu je... tapi takpa lah rezeki orang kat rumah ni je lah.

BAHAN2:
250g Mentega 150g Gula Perang
3 biji Telur gred A
375g Buah2an Kering Campur*
300g Tepung Gandum*
1 st Sodium Bicarbonate*
1 st Cream of Tartar*
(* satukan)

150g Gula Pasir (untuk gula hangus) 

CARA2:
1. Putar mentega & gula perang sehingga kembang.
Masukkan telur satu persatu sehingga sebati.
Masukkan campuran tepung & buah2an kering yang di tanda*, sedikit2 sehingga rata.
2. Masak gula pasir sehingga hancur dan menjadi karamel keperangan.
Angkat & terus tuang ke dalam adunan kek & di kacau rata dengan cepat supaya tidak berketul.
3. Tuang adunan ke dalam tin yang di lapik kertas & di gris.
Tutup tin dengan kertas aluminium.
Kukus selama 4 jam sehingga masak.
(Pastikan air telah menggelegak sebelum mula mengukus. Tambahkan air panas apabila air kering, jgn guna air sejuk)

Homemade Burger

 Either frozen burger pieces from supermarket or ready-cooked burger from famous fast food restaurant, they all are now super-thin.... blame it on terrible inflation... pay more for less! Let's make our own burger meat in order to satisfy our own crave.... you'll get a healthier version of big fat burger.... 100% red meat and most importantly more delicious!!

Makes 3 burger pieces
INGREDIENTS:
300g Beef - minced 
1/2 packet Kofta Spice Mix
(can replace with 1/4 tsp White Pepper powder, 1 tbsp Breadcrumbs/Flour, 1 tsp Ginger Juice, Salt) 
Chopped Spring Onion

METHOD:
1. Mix all ingredients well & shape into round/oblong patties.
Place them on a griddle and flip once browned.
2. Once cooked, lift out and place in between toasted burger bread together with omelet, grilled tomato and cooked shredded cabbage.
Don't forget chili sauce and mayonis!
3. Serve immediately.

Makan burger kat fast food restaurant yang berjenama pun sekarang ni tak puas hati.... kalau beli daging burger kat supermarket pun sama gak.... nipis melayang mak ai.... nak yg tebal dan daging bermutu tinggi baik buat sendiri. Bukan susah camna sangat pun, boleh gak nak buat tebal mana, besor suka hati... lepas tu letak ler apa pun dalam roti tu... best tak leh lawan yang beli....hehe memang puas makan!

(atau gantikan dgn 1/4 st Serbuk Lada Sulah, 1 sb Breadcrumbs/Tepung Gandum, 1st Jus Halia, Garam)
Daun Bwg - cincang 

CARA2:
1. Campurkan kesemua bahan2 sehingga sebati.
Bentukkan bulat/bujur & bakar atas kuali sehingga masak.
2. Lapiskan daging burger ke dalam roti bersama telur, tomato panggang & kobis.
Letakkan juga sos cili & mayonis.
3. Hidangkan segera.

Mini Sardine Quiches

I made these instant quiches after a friend messaged that she was dropping by the house in the late afternoon. I took the opportunity to invite another friend to join the evening tea and catching-up since the last gathering was quite a while back. It was so quick to prepare, using all the readily available ingredients and were ready just before they arrived. They all enjoyed it so much especially the quiches were still warm and fresh from the pie maker. The pastry were crispy and soft to bites whilst the savory filling complement it well.

INGREDIENTS:
Frozen Uncooked Roti Canai
1 cup of mashed Leftover Chili Sardine Dish
1 Scramble Egg
1/4 cup Fresh Milk
1 Egg
1 Sausage - sliced
Chinese celery - chopped 

METHOD:
1. Cut out roti canai with round cutter and placed in mini pie maker or greased muffin mould.
Bake for about 5 minutes or more until golden in color.
2. Mix rest of ingredients together and pour into roti canai casing.
3. Bake further until cooked and golden top.

Senang nya nak buat quiche dengan pie maker. Tak sampai setengah jam dah siap menggunakan bahan2 yang telah sedia ada. Bila kawan Along call nak datang rumah, Along pun buat ni untuk tambah menu yg lain2 tu untuk minum petang. Dalam banyak2 tu, kuih ni yang abis licin dulu. Kulit nya rapuh digandingkan dengan inti sardine pedas memang sedap sangat.....hehe.

BAHAN2:
Roti Canai Beku yg belum di masak
1 cwn Lauk Sambal Sardine yg di lecek
1 bj Telur - di masak hancur 
1/4 cwn Susu
1 bj Telur
1 btg Sosej - hiris 
Daun Sup - cincang 

CARA2:
1. Potong roti canai bentuk bulat dan letak ke dlm pie maker atau acuan muffin yg telah di minyakkan.
Bakar selama 5 minit atau sehingga keperangan.
2. Campurkan kesemua bahan2 inti & tuangkan ke dlm kulit roti canai tadi.
3. Bakar lagi sehingga inti nya masak dan berwarna keperangan.

Pengat Bebola Ubikayu (Tapioca Dumpling Dessert)

 I love tapioca and anything that made from it. I tasted this dessert at a friend's house and like it so much that I decided to try making it myself. I made it by trial and error and followed the tips that his mum gave me. The dumpling turned out ok but a bit hard due to tapioca flour added to it. So I have modified it into the recipe below which using only glutinous rice flour in order to produce soft springy dumplings.

INGREDIENTS:
1 cup Grated Tapioca/Cassava
+/- 1/4 cup Glutinous Rice Flour
1-2 Purple Sweet Potato
1 liter Coconut Milk
1/4 cup Sugar or to taste
1/4 tsp Salt - cubed 
1 Pandan Leaf
Coloring

METHOD:
1. Divide grated tapioca into few portions and color each portion as you prefer.
2. Mix grated tapioca and glutinous rice flour, adding flour just enough to form balls of marble size.
3. Boil 1/2 pot of water and drop the tapioca dumpling into.
Lift out the dumpling once it float to the surface.
4. Boil sweet potato until half cooked.
5. Place rest of ingredients in a pot together with the dumplings and sweet potato and cook until boiled.
Stir all time to avoid coconut milk from curdling.
6. Serve warm.

Along memang gemar sangat apa2 kuih yg di buat daripada ubikayu. Dah biasa buat Pengat Ubikayu, apa kata kali ni kita buat Pengat Bebola Ubikayu pula. Sedap tau buat camni.... pertama kali Along rasa kat rumah kawan, teringat2 nak makan lagi so Along cuba2 lah buat mengikut panduan yang di kongsikan tapi keras pula sedikit sebab campuran tepung ubikayu. Jadi Along pun ubahsuai resepi bawah ni tanpa tepung ubikayu dan hanya guna tepung pulut supaya bebola nya kenyal2 lembut.

BAHAN2:
1 cwn Ubikayu Parut
+/- 1/4 cwn Tepung Pulut
1-2 bj Keledek Ungu - potong kiub 
1 liter Santan
1/4 cwn atau secukup rasa Gula
1/4 st Garam
1 helai Daun Pandan
Pewarna

CARA2:
1. Bahagi ubikayu kpd beberapa bahagian & warnakan setiap satu menikut warna pilihan anda.
2. Campurkan ubikayu parut dgn tepung pulut sehingga sebati.
Pastikan tepung di campur hanya cukup untuk di bulatkan.
3. Didihkan air dlm periuk separuh penuh dan rebus bebola ubikayu sehingga timbul.
4. Rebus keledek sehingga separuh masak.
5. Masukkan kesemua bahan termasuk bebola ubikayu dan keledek ke dalam periuk dan masak sehingga mendidih.
6. Hidangkan suam.

Apam Pisang Gula Hangus II (Steamed Banana Cake)

 My hubby just chopped a banana tree from our backyard which fruits have just ripened. I purposely let the bananas ripened on the tree until yellowish color because that will make them sweet and tastier although by doing so will attract birds to peck on it. Herewith what I came up with.... moist and delicious Banana Steamed Cake with caramelised sugar.... perfect for breakfast which is a healthy choice.

 This time I have created a slightly different version than the earlier one here, which produces more dense and heavier texture.... most of all more banana taste! However, try the first version if you prefer slightly spongy. Anyway, both are moist and tasty.

Size: 8" round
INGREDIENTS:
2 cup Mashed Banana
3/4 cup Caster Sugar
3 Eggs (Grade A)
½ cup Condensed Milk / Sweetened Creamer
½ cup Evaporated Milk
1/4 cup Coconut Milk
2 cup Flour
1 tsp Baking Powder
1 tsp Bic Soda
1/4 tsp Salt
½ cup Sugar*
3 tbsp Butter* (* for caramel)

METHOD:
1. Place all ingredients, except the last two ingredients*, in a food processor and blend until well mixed.
(Note: I purposely left the banana a bit chunky as I like the bits in the cake)
If you don't have an fp, mashed banana first, add in the rest of ingredients in the above order as listed.
2. Melt sugar above small fire until caramelised.
Off fire & add in butter, stir well until it melts.
Add instantly into the cake mixture and mix quickly.
3. Pour into greased tin & steam for 1- 1½ hour until done.

Alhamdulillah, rezeki pisang yang tak putus2 dari laman belakang rumah. Along sengaja biarkan pisang tu kekuningan di pokok baru di tebang supaya rasa nya lebih manis di bandingkan yg masak peram. Dapat juga lah Along panjang2kan kepada kekawan. Kebetulan sisHani & CikTie singgah minum petang pula hari tu. Sempat gak Along geduk2 buat Apam Pisang kegemaran Liana. Kalau buat kek kurang laku tapi kalau buat apam memang suka sangat si kecil Along ni. Keluar dari periuk, panas2 abis tiga ketul Liana makan.... suka nya hati mama sebab bukan mudah nak kasi Liana makan apa2 pun. Lepas minum petang, masih cukup buat sarapan pagi dan bekal Liana ke sekolah.

Kali ni Along hasilkan resepi yang sedikit berbeda dari yang sebelum nya kat sini. Dari segi rasa, sama sedap tapi lebih lembab dan terasa pisang nya. Kalau anda nak yg lembab tapi gebu sedikit, boleh cuba versi yg pertama tu. Tapi Along lebih suka yg camni.

½ cwn Susu Pekat
½ cwn Susu Cair Evaporated

1/4 st Garam
½ cwn Gula Pasir*
3 sb Butter* (* buat Gula Hangus)

CARA2:
1. Masukkan kesemua bahan2 ke dalam food processor, kecuali bahan*, & blend sehingga sebati.
(Note: Along sengaja biarkan pisang tu berketul2 sedikit & tidak terlalu lumat sebab Along suka rasa ketulan pisang dlm apam tu)
Kalau takda fp, lecek pisang & campurkan bahan satu persatu mengikut aturan list di atas.
2. Cairkan gula sehingga perang & tutup api.
Campurkan butter sehingga cair & tuangkan ke dlm adunan dgn segera.
Gaul sebati dgn cepat supaya gula tidak membeku.
Tuangkan ke dlm loyang yg di lapik & di gris.
3. Kukus selama 1- 1½ jam sehingga masak.

Bubur Oat (Oat Porridge) II

Healthy and delicious breakfast.... very filling too!

Serves 3-4 persons
INGREDIENTS:
2 cups Instant Oatmeal
1/2 Chicken Breast - chopped
1 Carrot - diced into tiny bits 
2 slices Ginger
1/2 cup Milk
Salt & Pepper
Garnish - Fried Onions, Chili, Spring Onion, Chili Oil

METHOD:
1. Place chicken, carrot, ginger, 4 cups of water, salt & pepper in a pot and boil.
2. Add in oatmeal & milk; stir until boiled.
3. Serve immediately with garnishes.

Hidangan sihat untuk sarapan.... sedap dan mengenyangkan! Nak buat pun senang jer....

Bahan Tabur - Bwg goreng, cili, Daun Bwg & Cili Oil 

CARA2:  
1. Letakkan ayam, karot, halia, 4 cwn air, garam & lada sulah ke dalam periuk & masak sehingga mendidih.
2. Masukkan oatmeal & susu, kacau sehingga mendidih.
3. Hidangkan segera dengan bahan tabur.



Evening Tea with Friends

 I was thrilled when a friend messaged that she was coming over in the late afternoon. So I quickly made Banana Steamed Cake and Sardine Quiche. Also had Kuih Siput (snail shaped snacks), Tapioca Dumpling Dessert, Mandarines and Harrods Afternoon Tea. Sis Hanifah brought along Baked Tapioca Kueh and icecream by CikTie. There was also fruit cake sent by sis Marina. We had fun chitchatting! Luckily AbangLi was sporting enough..... hehe. Thank-you all for making time.... luv ya.

Pasta Bake with Tomato, Ricota & Spinach Sauce

 I was trying the sauce that I bought from the recent year end holiday in Taiping.... not bad... simple and easy preparation.

INGREDIENTS:
500g Pasta - boiled until soft ala dente 
1 jar Tomato, Ricota & Spinach Sauce
Slice Cheese or grated Cheddar/Mozarela Cheese

METHOD:
1. Mix cooked pasta with the sauce & place in a greased caserole.
2. Sprinkle cheese on top & bake at 200C for 30-40 minutes.
3. Serve with grated parmesan cheese.

BAHASA MALAYSIA VERSION
Sos ni nampak sedap, so Along pun beli 3 botol waktu bercuti di Taiping bulan lepas. Dua botol tu Along kasi kat kawan2 sebagai buah tangan. Ada pula kasi buku resipi percuma, best je nampak resepi2 dalam tu, ada lebih 140 resepi ala Italia. Senang nya bila guna yg sudah siap sedia, dapur pun tak lah berselerak. Apa2 pun tak leh lawan yang 100% homemade....hehe... itu pendapat Along lah ya tapi bebudak kat rumah ni memang hantu pasta..... janji pasta pasti gembira.

BAHAN2:
500g Pasta - rebus sehingga lembut ala dente 
1 botol Sos Tomato, Ricota & Spinach
Slice Cheese or grated Cheddar/Mozarela Cheese

CARA2:
1. Campurkan pasta & sos.
Masukkan ke dlm bekas tahan panas yg telah di sapu mentega.
2. Tabur cheese di atas nya & bakar 200C selama 30-40 minit.
3. Tabur parmesan cheese sewaktu menghidang.

Coconut Jelly (Jeli Kelapa) and New Year Party

 Cooling and delicious dessert served on the New Year's party in the office..... I hosted a new year makan2 in the office corridor and made about 60 tubs of Coconut Jelly... they all ran out so fast and those who showed up late missed it unfortunately.

Gratitude to my friend's auntie who taught me this many years ago but I have converted the measurements
Yields about 2 dozen small tubs
INGREDIENTS:
10g Agar-Agar/Jelly Powder
1.5 liter Water
300g Sugar
1.5liter Young Coconut Juice
A pinch Salt
3 Screwpine/Pandan Leaves - knotted 
Shredded Young Coconut Flesh

METHOD:
1. Boil jelly powder, sugar and water until dissolved.
Add in coconut juice, salt & screwpine leaves and let it boil again.
Add in coconut flesh & off the fire.
2. Pour into small tubs and cool at room temperature.
Chill in fridge before serve.

 Ini entri terlewat sebab tuan rumah tak berapa sihat & kepala otak tengah berserabut dengan azam baru dan macam2 lagi. Walau bagaimana pun di usahakan juga entri ni buat pembaca2 semua, semuga anda dapat menikmati jeli yang amat sedap dan laris sekali.... Along buat lebih kurang 60 cawan untuk makan2 di tahun baru di pejabat dua minggu lalu dan habis licin. Sebanyak 20 biji kelapa muda di korbankan untuk menghasilkan jeli kali ini... alhamdulillah, hasil dari pokok nan sebatang tepi rumah. Tkasih hubby yg bertungkus-lumus tolong belah kelapa2 tu.

Along belajar buat ni dari makcik sahabat Along yang berniaga jual ni. Dah lama dulu dah & banyak kali dah Along buat ni tapi baru kali ini berkesempatan nak di kongsikan. Semuga Allah memberkati nya dengan rezeki dan kesihatan atas kebaikan hati nya. Along dah convert sukatan supaya lebih mudah dan jumlah yg lebih kecil.

BAHAN2:
10g Serbuk Agar-Agar/Jelly
1.5 liter Air
300g Gula
1.5liter Air Kelapa Muda
Secubit Garam
3 helai Daun Pandan - simpul 
Isi Kelapa Muda yg di parut kasar

CARA2:
1. Masak serbuk jelly, gula & air sehingga larut.
Masukkan air kelapa, garam, daun pandan & didihkan semula.
Masukkan isi kelapa & padamkan api.
2. Tuangkan jelly ke dalam bekas2 kecil & biarkan sejuk.
Masukkan ke dalam petisejuk sebelum di hidangkan.

Syukur alhamdulillah, rezeki dari pokok sendiri....

There were many other foods served on the party like pasta, beef pie, salad, etcs.... Amongst others are my favourite Green Velvet Cake from the local hotel... it costs RM170 (wow! I should open up bakery business....hehe)

The main attraction was stuffed turkey....it was very juicy and crispy on the outside. The best thing about it is boneless!! It is delicious but very expensive... I think it's worth it!

Ketam Telur Masin (Chili Crabs with Salted Eggs)

INGREDIENTS:
~500g Crabs
1 Lemongrass
1/2 Big Onion - sliced 
15-20 Dried Chilies*
1/2 Big Onion*
1 cm Ginger*
2-3 cloves Garlic* (* blend finely with some water) 
4 tbsp Tomato Sauce
2-3 tbsp Chili Sauce
2 tsp Sugar
1 tsp Cornflour (+ few tbsp water) 
2 Salted Eggs
1 Tomato - sliced 
Salt

METHOD:
1. Heat up few tbsp oil and stir-fry sliced onion & bruised lemongrass until fragrant.
Add in blended ingredients* and stir-fry until fragrant and dried up a bit.
Add in tomato/chili sauce, conflour paste, sugar, salt & some 1/2 cup water.
(Note: add salt as necessary depending on how salty the the salted eggs)
Once boiled, add in crabs and cover until it is done.
2. Add in salted egg and stir quickly to mix while the egg whites are thickening.
Add in tomato and cook further few more minutes.

Mmmmmm.... sedap nya lauk malam ni... Gandingan ketam masak cili dan telur masin amat menyelerakan. Telur masin yg Along guna tu tak berapa masin jadi rasa kuah nya sedang dan tidak terlalu masin. Yang best nya, ada telur masin yg kuning tu amat sedap di gandingkan dengan kuah ketam masak cili ni.

BAHAN2:
~500g Ketam
1 btg Serai
1/2 bj Bwg Besar - hiris
15-20 Cili Kering*
1/2 bj Bwg Besar*
1 cm Halia*
2-3 ulas Bwg Putih* (* blend dgn sedikit air) 
4 sb Sos Tomato
2-3 sb Sos Cili
2 st Gula

1 st Tepung Jagung (+ sedikit air) 
2 bj Telur Masin
1 bj Tomato - potong 
Garam

CARA2:
1. Panaskan sedikit minyak & tumis bawang besar hiris & serai yg di ketuk sehingga wangi.
Masukkan bahan2 yg di blend* sehingga wangi & kering sedikit.
Masukkan sos tomato/cili, tepung jagung, gula, garam & 1/2 cwn air.
(Nota: tambahan garam bergantung kpd kemasinan telur) 
Masukkan ketam apabila kuah mendidih.
Tutup sehingga ketam masak sepenuh nya.
2. Masukkan telur masin & kacau dgn cepat supaya telur putih bergaul rata.
Masukkan tomato & masak lagi sebentar sehingga tomato layu.

Ayam Penyek

 I made this to go along Nasi Lemak that I posted earlier here. Posting the recipe herewith after a request from FB reader. It is just a simple recipe but sometimes the simplest is the best.

INGREDIENTS:
2 Chicken Thigh (made of 1/2 chicken)
1 piece Turmeric Root*
4 Red Chilies* (* blend / pound)
1/2 tsp Sugar
Salt

METHOD:
1. Slice chicken on its surface to create few lines of shallow slits.
Rub chicken with salt, sugar & blended ingredients.
Rest for about 10 minutes.
2. Deep fry until cooked & crispy on the outside.
3. Lift out from oil and smash lightly with back of chopper before serving.

Along kongsikan resipi ni untuk tunaikan permintaan seorang sahabat fb.... Resipi nya sempoi je mengikut peredaran selera... kekadang dah tak selera pula bau2 rempah dan nak yg simple2, pekena pula dengan nasi lemak hari tu yg dah cukup harum, memang sesuai lah dengan Ayam Penyek yg sempoi ni. Lagi pun dgn keadaan Along yg semedang bz ni, buat masakan mudah2 je lah.... Kalau pandai imbangkan rasa pedas & garam nya, sedap lah jadi nya dan harum kunyit bila di goreng.

BAHAN2:
2 ketul Paha Ayam (1/2 ekor Ayam bahagian bawah) 
1 ketul besar Kunyit Hidup*
4 biji Cili Merah* (* blend/tumbuk) 
1/2 st Gula
Garam

CARA2:
1. Ayam di kelar2 & lumurkan dgn garam, gula & bahan2 tumbuk.
Perapkan 10 minit.
2. Goreng dgn minyak dalam sehingga garing.
3. Angkat & penyekkan dgn muka parang sebelum di hidangkan.
