2 sb Pes Cili Kering
1 kiub TomYam
2 sb Sos Tiram
4 sb Sos Tomato
2 sb Sos Cili
1 sb Kicap Manis
Sayuran campur - Karot, Cauliflower, Capsicum, Terung, Tomato, dll
1 sb Tepung Jagung - bancuh dgn sedikit air
4-5 helai Daun Limau Purut
Garam, Gula
CARA2:
1. Lumur ikan dgn sedikit garam & serbuk kunyit.
Goreng sehingga masak & garing. Ketepikan.
2. Tumis sedikit minyak dan tumis bwg putih/besar, halia, serai sehingga wangi.
Masukkan pes cili dan kiub tomyam, kacau sehingga pecah minyak.
Masukkan kesemua jenis sos, kicap, 1 cwn air, garam, gula dan biar mendidih.
Masukkan bancuhan tepung jagung dan masukkan daun limau purut dan sayuran.
Masak sebentar sehingga sayuran layu.
3. Curahkan ke atas ikan goreng tadi.
4. Hidangkan segera.

Biskut Cornflakes (Again)
Ini entri belated biskut raya yg terakhir.... nanti selepas ni kita tayang kek lah pulak ya.... Along buat entri biskut satu-persatu supaya mudah kemudian hari bila anda nak search blog untuk kukis ni.... jangan boring ya....peaaaaaceeee!!
Sekut yang satu ni pulak my fevret.... yang sebelum ni buat untuk anak2, Emak dll tapi yg ini memang sendiri yg suka tapi anak2 pun tumpang suka gak....hehehee.

Biskut Mama Carrie (Again)
Sorry ya, kes ulang-tayang lagi.... pulak tu dah raya baru nak tayang.... bukan senang nak ngadap pc hari2.... Takpa lah, kalau berkenan boleh lah buat untuk raya haji nanti ya. Biskut ni dulu bukan main popular lagi tapi sekarang ni susah nak nampak dah. Along buat pun sebab teringatkan Emak dan nephew yg suka sangat makan sekut ni. Nak buat sekut nya mudah tapi bab nak melukis tu yang banyak kena sabor.... kalau ada assistant takpa lah, ni buat sorang2 dari pagi sampai ke petang baru siap walaupun hanya dua adunan.... tapi berbaloi gak sebab sekut ni memang laris bila di hidangkan.
Ciri2 biskut ni mesti rangup dan aising nya rangup ringan dan bila digigit terus cair....

Tart Nenas Tekan (Pressed Pineapple Tarts) Again
Enjoy the photos of delectable cookies for the recent Idh... still have little bit reserved for the upcoming visitors. Pineapple tarts are our family's favourite and a must-do for Idh especially when the two boys are away, these will be nice packs for their Idh treat.
The recipe has been shared earlier in here but I tried different shape this round. Make a ball of cookies with homemade pineapple filling and press into any mold shape of your choice! It is much easier method than making tart rolls.... (in my opinion....).

Menu Biskut dan Kek Hari Raya Aidil Fitri 2015
Tahun ni pertama kali menyambut Hari Raya Aidil Fitri di KL.... tetapi seperti biasa kami balik kampung terlebih dahulu. Tahun ni giliran beraya di kampung hubby di Sarawak. So Along pun buatlah serba sedikit biskut dan kek buat buah tangan untuk mertua, emak di Taiping dan seorang dua sahabat. Tak dapat nak buat banyak sebab badan kurang sihat dan buat sorang2 tiada yg membantu, apa yg terdaya sahaja.
Minggu hadapan ada open house dan marhaban untuk surau residen kat condo ni, nanti Along update menu tu kendian lah ya. oklah, meh tengok menu biskut dan kek yg di siapkan tahun ni.... so kawan2 kalau berkenan boleh lah cuba next time ya.

- Ni kek terbaru yang di perkenalkan oleh warga Sarawak.... sedap nya tak terhingga.... kek yg kaya rasa amat mengasyikkan. Tunggu lah bila free nanti Along buat entri nya ya.
Aneka kek lapis Sarawak yang Along bawa balik dari kampung Sarawak untuk di hidangkan kepada tetamu.

Shepherd's Pie - my style
Typically Sheppherd's Pie uses pre-cooked minced meat but I like mine with chunky beef.... I used raw meat and let it simmer in the oven with the rest... It produces delicious moist bottom filling with slight gravy just the way I like it.... The meat is tender and the vegetables complement it very well. This recipe is also the simplest Shepherd's Pie to make and definitely the most delicious for me.... I've been using this recipe that I've created for almost 30 years and still the best!
The recipe I made recently is just a small portion, you can double it if you like. This is no fuss recipe so you can add other vegetables of choice and your preferred herbs & seasonings.

Produces: 5" x 8" casserole (serves 3-4 persons)
INGREDIENTS:
200g Beef - cut into ~1cm cubes
Assorted Vegetables cut into chunks - I used Big Onion, Carrot, Pumpkin & Peas - other choices can be Potatoes, Mushrooms, Cauliflower, Leek, Turnips, etc
1/4 to 1/2 cup Water
1 tbsp Butter
1 tbsp Flour
1/4 cup Milk
1/4 tsp Maggee Chicken Stock
Seasoning - Salt, Pepper, Chili Flakes, Mixed Herbs
Few drops of Browning (optional) - to give nice brown color effect
TOPPING:
Mash potato - u can use homemade or instant - I prefer instant as it produces very smooth texture, see the sample that I used below
Grated Cheddar Cheese
METHOD:
1. Melt butter and add in flour stirring until the color change slightly.
Add in milk and stir until smooth.
2. Mix all ingredients, except the mashed potato, and pour into a buttered casserole.
3. Prepare the mashed potato topping per packet instruction and spread on top of the beef filling.
To make your own topping, mash boiled potato and add few tbsp of milk at a time until it produces the required consistency. Add a tbsp of butter and season with black pepper and mixed herbs.
4. Sprinkle grated cheese on top.
5. Bake at 180C for 45 minutes.

Sheperd's Pie yg Along buat ni lain dari yg selalu kita lihat... Kebiasaan nya lapisan bawah tu ialah daging cincang yg telah di masak sebelum di bakar... tapi Along lebih suka menggunakan ketulan daging yg belum di masak (ia pasti akan masak dgn lembut, jangan risau) dan Along lebih suka lapisan bawah tu lembab atau berkuah sedikit seperti stew, barulah cair jer dlm mulut bila makan dgn lapisan kentang lecek tu....heheee. Along reka resepi ni sudah hampir 30 tahun lalu dan masih resepi yg paling Along sukai... Sila lah cuba dan semuga anda juga menyukai nya.
Cara seperti ni juga amat mudah dan cepat di sediakan. Resepi ni tidak cerewet dan bahan2 nya boleh di ubahsuai ikut apa yg ada di dapur anda. Along buat bekas kecil jer kali ni, anda boleh gandakan untuk hidangan yg lebih ramai.

2. Campurkan kesemua bahan2 dan tuang ke dlm bekas tahan panas yg telah di sapu butter.
3. Sediakan kentang lecek, ikut arahan spt tertera di bungkusan dan ratakan ke atas inti daging tadi.
Jika nak buat homemade topping, lecek kentang rebus, campurkan susu sedikit2 sehingga lembut. Campurkan 1 sb butter, serbuk lada & herba.
4. Tabur parutan cheese dan bakar 180C selama 45 minit.

Biskut Red Velvet
These beautiful cookies are delicious and easy to make, perfect treat for Idh and popular amongst all age from kids to adults. The deep chocolate red color and the rich taste of chocolate and nuts all add up to irresistible cookies.

INGREDIENTS:
120g Planta Margarine (I mixed half with Buttercup)
10g Windmill Ghee Blend
100g Caster Sugar
1 Egg Yolk
120g Flour*
50g Rice Flour* (* mixed & sift)
50g Almond Nibs
1 tbsp Cocoa Powder
1/2 tbsp Vanilla Essence
1/4 tbsp Red Coloring
30g White Chocolate Chips
30g Chocolate Chips
METHOD:
1. Beat margarine/butter, ghee, sugar until fluffy.
Add in egg, VE, red coloring & mix well in each addition.
Add in flour mixture*, almond nibs and chocolate chips and mix evenly.
2. Roll into small balls and decorate with additional chips.
3. Bake 170C for 15 minutes.
4. Let it cool slightly before removing from baking tray as the cookies are soft while they are hot.
5. Keep in airtight container.

Ayam Masak Bali
My eldest son must have chicken in the menu everyday.... I already made most of the chicken dishes in this Iftar month thus far.... so looking for something different and found this one. It is somewhat new to us because it infuses few different aromas... quite strong aroma in my opinion.... nice for occasions but not too often as daily dishes.... overall I give it 5* out of five.

CARA2:
1. Perap ayam dgn bahan2 blend*, kunyit dan kicap pekat.
2. Goreng ayam sehingga masak & masukkan lebihan perapan tadi, daun kari, daun limau purut, serai ketuk, asam keeping, garam & gula.
Masak sehingga kering dan Wangi.
3. Hidangkan dengan nasi atau pulut.

Shortbread Manik

BAHASA MALAYSIA VERSION
Biskut shortbread kegemaran hubby Along.... Setiap kali dia pergi Mark & Spencer mesti dia beli shortbread kat situ. Tahun lepas Along makan biskut ni kakak ipar Alang buat, terus jer jatuh cinta. Kukis ni rasa sedap dgn lemak mentega dan ada pula manik2 rangup yg berwarna-warni memang menarik minat si kecil. Nak buat nya pun mudah, bakar jer satu adunan sekali gus tapi kena ada acuan shortbread lah ya. Hubby gembira jer bila dia nampak biskut ni, tamak pulak suruh buat satu lagi adunan tapi Along kata cukup lah, makan jer dulu yg ada ni.... hehe

Hasil: 100 keeping / tin 12" persegi
BAHAN2:
250g Butter
1 cwn Gula Aising
1 st Esen Vanilla
2 cwn Tepung Gandum*
1½ cwn Tepung Jagung*
1 st Baking Powder* (* ayak sekali)
Manik Berwarna-warni
CARA2:
1. Pukul butter & gula sehingga kembang.
Masukkan EV, campuran tepung* sehingga rata.
2. Ratakan ke dalam tin yg di lapik kertas.
Tabur manik ke atas adunan & tekan dgn pemotong shortbread.
3. Bakar sehingga masak (Along guna 170C 20minit).
4. Sejukkan dan simpan dlm bekas kedap udara.

Spaghetti Aglio e Olio with Dried Tomato
This is last week menu but only now I have time to update here. Just a simple menu but wanna update here for my own record. Personally I love to flash back sometimes what I've done in my kitchen.... good to test own appetite when drained out of ideas.
I love dried tomatoes (this time I bought semi-dried tomatoes in olive oil) and adding it to this recipe makes it so very delicious.... I could finish two plates of it easily despite low appetite in fasting month....hehe. I used homemade Spinach Spaghetti per the previous entry and served it with my favourite prestzel sticks and roasted chicken.

Homemade Spinach Spaghetti & Tagliatelle

I made half batch into spaghetti and the remaining as tagliatelle.... Each portion is just nice for table of three here.

Yields ~1 kg pasta
INGREDIENTS:
2 Eggs* - lightly beaten with fork
1 bunch Spinach* - blend (* mix and measure 190ml)
500g Flour
1 tbsp Olive Oil
METHOD:
1. Mix all ingredients and knead until smooth.
The dough should be very firm.
2. Divide the dough into 5 balls and roll each flat before cutting with pasta machine.
3. Boil water + salt + olive oil.
Boil spaghetti/tagliatelle about 5 minutes until al dente.
Strain excess water and mix with 1 tbsp olive oil to prevent sticking.
4. Serve with your favourite sauce.

Teringin lak nak makan spaghetti iftar ni... asyik makan nasi pun jemu gak... Terliur tengok Lina Thomas buat hari tu... ngancam betul spaghetti yg Lina buat dgn warna hijau gelap...
Along buat pucat sedikit tapi next time boleh tambah spinach banyak2... Puas jati buat sendiri... bukan sahaja jimat kos tapi puas makan hasil tangan sendiri..... Resipi bawah ni cukup untuk dua kali hidangan di rumah ni, jadi Along buat separuh spaghetti dan separuh lagi tagliatelle.

BAHAN2:
2 biji Telur* - pukul dgn garfu
1 ikat Sayur Spinach* - blend (* Campur = 190ml)
500g Tepung Gandum
1 sb Olive Oil (Along tambah)
CARA2:
1. Gaul kesemua bahan2 & uli sehingga rata.
Adunan doh ni mmg keras, jangan tambah air supaya pasta anda kenyal.
2. Bahagikan doh kepada 5 ketul dan leperkan.
Leperkan dgn mesin mee (Along guna tahap 3) dan selepas tu potong dgn mesin mee.
3. Didihkan air + garam sikit + olive oil.
Rebus spaghetti/tagliatelle selama 5 minit sehingga ala dente, tapis.
4. Lumurkan dgn 1 sb olive oil supaya tak melekat.
5. Siap untuk di hidangkan dgn sos kegemaran anda.

Apam Nasi
Iftar menu on day 14 yesterday.... very soft and spongy... cheap ingredients and produces big batch.... but you need to plan early as it requires some fermentation.

INGREDIENTS:
1 cup Cooked Rice
¾ cup Sugar
1¼ cup Water
A pinch of Salt
1 cup Rice Flour
1 cup Flour
1 tsp Instant Yeast
Coloring
METHOD:
1. Blend all ingredients, except yeast, until smooth.
2. Mix in yeast and leave to ferment for 2-3 hours.
3. Color as you like & pour into small cups.
4. Steam for 30 min with medium fire.
BAHASA MALAYSIA VERSION
Apam Nasi ni kuih yg kebiasaan nya di jual di pasar2 Melayu dan Cina di Malaysia. Bahan2 yg di gunakan tak susah dan murah yg sedia ada di dapur. Nak buat pun mudah cuma perlu di perap lama, oleh itu kena rancang awal2 lah kalau nak buat supaya hidangan siap di waktu yg di kehendakki.
Along Nampak resepi ni di facebook Norhayati Salleh dan bila google memang dah ramai yg mencuba nya... tak dapat pula nak trace empunya asal nya. Terima-kasih semua dan juga tuan punya resipi ni, memang lembut dan gebu, secukup rasa.
Along kukus guna cawan lompang plastic kecil... sebabkan nakkan ia mekar, Along guna api yg kuat... tau apa jadi? Acuan tu cair.... so Along terpaksa buang jer sebab takut termakan bahan kimia dari bekas plastic tu. Batch yg kedua, Along guna api perlahan sbb takut kejadian yg sama.... so anda hati2 ya kalau guna bekas plastic untuk mengukus kuih.

¾ cwn Gula
1¼ cwn Air
Secubit Garam
1 cwn Tepung Beras
1 cwn Tepung Gandum
1 sk Yis Segera
Pewarna
CARA2:
1. Blend kesemua bahan2, kecuali yis, sehingga sebati.
2. Gaulkan yis & perap 2-3 jam.
3. Warnakan & tuang ke dlm bekas2 kecil.
4. Kukus selama 30min dgn api sederhana.
